Technology Clinics Enhance Food Processing Skills in Nagaland

The Industries and Commerce Department, alongside the Nagaland Industrial Development Corporation Ltd (NIDC), successfully conducted ten Technology Clinics focusing on “Innovation in Food Processing” from October 13 to 18, 2025, at the National Institute of Food Technology, Entrepreneurship and Management – Thanjavur (NIFTEM-T) Liaison Office in Guwahati.

According to a press release from Er. Keneirienuo T Zatsu, Deputy Director of the Directorate of Industries and Commerce, the clinics attracted 60 entrepreneurs from across Nagaland. The program combined technical sessions with hands-on demonstrations designed to bolster entrepreneurial skills in the food processing sector.

Dr. Goutam Das, Assistant Professor at NIFTEM-T, led the first session, discussing the current food processing landscape in India and the Northeast. He highlighted opportunities for value addition in high-value geographical indication (GI) crops and underutilized fruits, including wood apple and star gooseberry, as well as products made from cassava, bamboo shoots, mushrooms, and cereal-based bakery items.

Subsequent clinics, run by experts Simanta Neog, Prostuti Chakravorty, and Udipta Hazarika, provided hands-on experience in various food processing techniques. Participants learned to make pickles, dehydrate vegetables, create candy, and prepare pasta and ice cream. Further training involved spice dehydration and the preparation of spice-based pastes and chutneys.

The clinics offered practical exposure to food-grade equipment, including electrical tray driers, steam jacketed kettles, and pasta-making machines. Participants also received guidance on preparing Detailed Project Reports (DPRs) to assist their future entrepreneurial endeavors.

The program concluded with a certificate distribution ceremony, affirming its commitment to promoting innovation, value addition, and inclusive growth within the MSME ecosystem in the Northeast region.

RAMP, the program’s support from the World Bank and the Government of India, aims to enhance market access, improve credit access, and build capacity for MSMEs in Nagaland. As MSMEs in the state modernize, access to advanced technology remains crucial for competitiveness.
